We love lamb, but cooking it indoors has not been my favorite thing to do. Bring on a hot grill or medium campfire and you are in business. This can be whipped together in 30 mins and will please the greek food lovers in the bunch.
Greek Lamb Chops with Gyro Chopped Salad W/creamy Tzatziki Dressing
Ingredients
dressing;
- 1 cup plain nonfat yogurt
- 1 cup cucumber seeded, chopped
- 2 Tbls. feta cheese crumbled
- 1 Tbls. fresh oregano leaves or ½ tsp dry oregano
- 1 garlic clove
- Juice of ½ lemon
- salt & pepper to taste
salad;
- 4 cups romaine chopped
- 1/4 cup red onion thinly sliced
- 1/4 cup feta cheese crumbled
- 10 grape or cherry tomatoes
- 8 Kalamata olives pitted
- 4 peperoncini chopped
Heat & toast, serve with:
- 2 Tbls. olive oil divided
- 2 pitas 6 ½“
- paprika to taste

Greek Lamb Chops
- 1 Rack Of Lamb
- seasoned with salt pepper, and dried oregano leaves (3 oz. each)
Instructions
- 1. Drain yogurt by spooning it onto several layers of paper towels inside a bowl. Gently press to compact and set aside for 20-30 minutes to drain. Meanwhile, process cucumber, 2 Tbls feta, oregano garlic, and lemon juice until cucumber is minced. Add drained yogurt (about ½ cup) and pulse to combine. Season tzatziki with salt & pepper, and set aside. Toss romaine, onion ¼ cup feta, tomatoes, olives, and peperoncini in bowl with about ⅓ cup tzatziki.
- 2. Greek Lamb Chops:: We do like Costco's Rack Of Lamb.... Cut the rack into individual chops. Rub both sides of chops generously with seasonings. Heat a grill pan or sauté pan over high and sear chops 2-3 minutes per side for medium rare. Let rest 5 minutes before serving.
- Heat 1 Tbls oil in a large nonstick skillet over medium. Add pita, (we like using the small Naan) toast for 2 minutes, then flip over and toast the other side; season with salt and Paprika. Toast remaining oil and pita in same manner. To serve, place pita on plates, then top with salad and lamb.
