RV Park Reviews
Oasis Amarillo RV Resort
We were looking for a new RV park near Amarillo, TX. Our go-to had always been The Big Texan. Nothing against the Big Texan, we liked the place and the staff but we needed a change. I try to pick locations based on our next destination. In other words, if we are heading west, get to the west side of a city for a less stressful drive out.
Hacienda RV Resort
This resort came highly recommended by a good RV friend of ours. It looked like yet another great Snowbird location at first glance. We had passed up Las Cruses to stay in Tucson on previous east or west trips on Interstate 10. Our intention this go-around was to visit Las Cruses and the surrounding area with a focus on White Sands National Monument.
LazyDays KOA
I do not believe that we will ever find another KOA like this. We had our reservations about staying in this location. Reviews were mixed ranging from outstanding to concerns about its inner-city location. Rest assured from our perspective this is one of the finest KOA’s we have ever stayed at. Snowbirds take note, you could not ask for a better location to spend time away from the cold temps and snow of the north.
Cooking Road Tested
Chicken Parmesan
Chicken Parmesan is a perennial favorite, but its multiple components can make it a time-consuming affair. This streamlined RV version is perfect for two. The tomato sauce quick and flavorful made with canned tomatoes.
Pasta Fagioli
Pasta e Fagioli is a hearty Italian soup composed of pasta and beans with a thick tomato base. This is a perfect weeknight RV version made from pantry staples. Serve with grated Parmesan cheese and drizzle with extra-virgin oil. We love to have a loaf of good Italian crusty bread to sop up the remaining soup.
Healthy Mini Meatloaf
This healthy mini meatloaf bakes in a muffin pan for an easy dinner. Ginny and I like to make this recipe ahead at home and seal-a-meal 4 muffins in a package. We freeze them and stock the freezer prior to leaving. Check the notes for reheat instructions.

New RV Search
What are we thinking, it’s a seller’s market out there? You can not find strong inventories of RV’s on any dealers lot. If your looking for a particular rig, size, or brand, good luck. Discounting is at an all-time low, rigs are flying off the lots. Throw in a pandemic and you might as well stay home and enjoy your own rig. The did not deter Ginny or me from heading online to see what we could find. I thought I would chronicle our efforts and walk you through our entire experience.
Homebase Downtime
As this pandemic continues to raise its ugly head, we have decided to hunker down at our Homebase. This frankly provided me with an opportunity for a handful of projects that I wanted to get prior to our next outing. Our last outing took us to Las Cruces, NM where the rig took a good beating from the heat and high winds. Throw in a little tumbleweed, ants, and various other debris and I had my hands full.
Homeward Bound
After spending a little over 14 days in Las Cruces visiting family in El Paso it was time for us to head back to TN. As we watched the spread of the virus inundate Arizona, Texas, and a number of southern states we decided to head directly home. Noticing posts from a number of you regarding crowed campground to the north our plans to head to Colorado then Wyoming east through South Dakota just seemed out of the question.
