New Bern KOA
Sometimes you just pick a winner. We have stayed at a number of KOA during our travels. This location by far has been the best on any we have stayed at. Shortly before our arrival and prior to me booking this location we got a notice from KOA that this was the KOA 2019 Campground of the Year. Our first reaction was, this should be interesting, what are the makings of Campground of the Year? I hope my notes below can begin to explain why this campground got a well-deserved award. Let’s walk it down.
Holbrook Petrified Forest KOA
Let Holdbrook KOA be your base camp to explore all the surrounding National Parks and Monuments. Easy access to I-40 gets you to the Painted Desert and Petrified Forest National Park (20 miles Holbrook/Petrified Forest KOA be minutes). Walk around the rim of Meteor Crater, less than an hour west.
Little Rock North KOA
Some of us need them, the elusive overnight location that does not have a Walmart, Cracker Barrel, Love’s or Cabella attached. Free is great but that is just not for you. You are looking for a safe, inexpensive location with power, water, sewer and a level place to park without unhooking. Little Rock-North KOA will offer you just that if you pick the right site.

It’s summer, time for burgers, dogs , picnics and yes Mac salad.This is an old school recipe that is tried and turn. Make this us as a side or just something to snack on.

There is nothing like comfort food while camping. Add a little cool fall weather and you have the perfect conditions for this recipe. It is one of our favorites. A little pre planing prior to leaving on your trip will go a long way with this. See the recipe for tips.
Greek Lamb Chops with Gyro Chopped Salad
We love lamb and Greek food but cooking it indoors has not been my favorite thing to do. Bring on a hot grill or medium campfire and your in business. This can be whipped together in 30 mins and will please the greek food lovers in the bunch.

Back To The Garden
Prior to jumping into RV most timing, I loved to garden. I spent a great deal of time preparing a 40′ x 4′ piece of ground getting it ready for our vegetable garden. The soil was very good to start but we amended that with a couple of years of composting that we had built up. The results were nothing but fantastic. We harvested the sweetest tomatoes, the best greens, Brussel sprouts, snap peas and beans we had ever tasted. I’m sure we all stay this about our gardens :). I loved working the soil in this patch of ground. It became a daily habit to go out and tend it.

Vegas And Going Batty
Vegas is calling to us once again. We are packing up Natasha for this trip looking forward to getting back out on the road. This itinerary will take us to some familiar city locations with new RV parks tossed in. You might ask the question, going batty, where is that? The answer would by Carlsbad Cavern National Park. We plan to revisit this park to witness the bats leaving the cave at dusk.
