Chicken Florentine

This is another go-to recipe for Ginny and I. No need for a ton of pots and pans, you can do this in one 12″ nonstick pan. The flavors are all very well balanced, and this recipe is a crowd pleaser. It can be easily thrown together with a side of rice or quinoa to soak up all the Florentine sauce. To make the side easy pick up a microwave bag of Seeds Of Change Quinoa.

How I managed to stumble onto an available site at this popular resort was pure luck. This might be the toughest reservation, besides Fort Wilderness I have ever experienced. The Signature sites I was interested in were booked solid through next year and beyond.

This Resort could have made our Gold List very easily if it was not for the road noise. We needed an overnight location with a full hookup during early July. This RV park seemed to fit the bill perfectly.

This park is located about 1 hour north of Atlanta nestled in the foothills of the Smokey Mountains. If you are looking for a quiet wooded campground with a 15-acre lake as the focal point this park is for you. As they say on their site, this might be the best-kept secret in North GA. You might have to wait to get a site that will accommodate a 35′ rig, but it’s worth the wait.

We’ve deconstructed stuffed peppers, so you can make this comfort food favorite in just 30 minutes. With our recipe for Unstuffed Pepper Skillet, all the traditional ingredients for stuffed peppers cook in one skillet which means easy cleanup. Simply sautĂ© turkey sausage, bell peppers and onions then stir in cooked rice and Campbell’s roasted red pepper soup. The roasted red pepper soup gives these Unstuffed peppers a deliciously unique flavor. Melted mozzarella gives them the perfect finish.

We were looking for a new RV park near Amarillo, TX. Our go-to had always been The Big Texan. Nothing against the Big Texan, we liked the place and the staff but we needed a change. I try to pick locations based on our next destination. In other words, if we are heading west, get to the west side of a city for a less stressful drive out.

LazyDays KOA

I do not believe that we will ever find another KOA like this. We had our reservations about staying in this location. Reviews were mixed ranging from outstanding to concerns about its inner-city location. Rest assured from our perspective this is one of the finest KOA’s we have ever stayed at. Snowbirds take note, you could not ask for a better location to spend time away from the cold temps and snow of the north.

We decided to invest in our 310GK-R and upgrade the Hot Water Heater. We were tired of the rotten egg smell regardless of the aluminum or magnesium anode rods or what I did to clean the tank out. The first order of business once we had decided on the Solutiude 310GK-R was the batteries. After researching battery types, solar compatibility, and recommendation from other RVers we landed on Battle Born Ion Lithium. Battle Born batteries can provide you with two to three times more power than a lead-acid battery which allows you to stay off the grid longer without having to hassle with a noisy generator. Keeping A RV Cool In Extreme Heat

The easy fix would be to find that perfect site. The one that has plenty of shade with your nose facing west and your butt facing east. However, that is a fantasy in today’s world when it comes to finding a site. You do not always have the intel to understand what your getting into or the resort randomly places you on the property. Awnings are great and provide some needed shade.   If you plan to step away from the rig for any length of time you will not want to leave them extended.

LTW 2021 Year In Review

I think the “learning curve” best describes 2021 for LTW. We gave our new Solitude 310GK-R a good shakedown, nearly 14,000 miles, and became familiar with its idiosyncrasies. I went back to school and became an RV Registered Technician. I put my new education to work and supplemented the electrical system with solar. There was plenty more, which I will try to review.

After exiting the tunnel in Downtown Mobile an SUV came up beside us and the occupants were yelling and pointing at us. Ginny finally figured out what they were shouting, YOU HAVE A FLAT! We were now looking for a place to pull the rig safely off the side off the road. We where near exit 24 on I-10, so I eased Boris and Natasha off the side of the road.

MORryde IS Upgrade

Five plus years of OEM suspension on our Open Range Roamer tested every inch of that RV. Many times described as an earthquake happening on wheels, we can attest to that. We took painstaking efforts to tie down, brace, or lock in items we thought would be displaced. Trip after trip we would find something ajar, broken, or lying on the floor. My first fix on the old rig was to replace the suspension with the MORryde SRE 4000 suspension system. That helped a bit but I knew there was another answer.
